Midwest One Local Summer: Weeks 10 and 11

My deepest apologies for missing the Midwest post for week 10.  I have included those meals below the week 11 summary. 

August in the Midwest is a time of abundance here in the Midwest—tomatoes, summer squash, sweet corn, potatoes, peaches, melons, and so much more.  Like many of us, Columbus Foodie has been “harvesting stuff like crazy from her backyard garden.” She used up a “fridge full of fresh veggies and beat this horrible heat than to make a cool, colorful orzo salad that has great flavor and texture.” Local ingredients included: cucumber, zucchini, radishes, Sungold tomatoes, fresh herbs, early girl tomato, bell peppers, red onions, and corn.  You should visit her post for all the details and to see a photo of the dish which makes you feel cooler just looking at it.

Kaleidoscope Living has spent the week eating at her desk but enjoyed local peaches, melon, three varieties of corn, various types of potatoes, and lots of cherry and grape tomatoes prepared with an absolute minimum of preparation.

Laeroport, is getting back into the swing of a new school year easy gazpacho made by throwing some tomatoes, garlic, onion, cucumbers, and basil into the food processor and blending.  She topped it with a bit of edamame for protein and paired it with some fresh, hot-from-the-oven bread made with Hudson Cream Flour. For her Week 10 post Laepoport adapted a recipe from a Midwest Gardener’s Cookbook to make Summer Pasta with diced summer squash, diced tomatoes, onion, garlic, olive oil, basil, oregano, and salt & pepper.

In Week 10, Kaleidoscope Living made a burrito inspired roll up with ground bison, zucchini, peppers, kale, tomatoes, and more.  You can read about it here
