Salad for Breakfast

Do you ever have one of those days when you forget what it is you like to eat?  I stood in my kitchen thinking, “What do I eat for breakfast?” this morning, and then looked out the window and saw our garden, still damp from last night’s storm.  It’s the first time we’ve had a real and successful garden, (a la Square Foot Gardening by Mel Bartholemew) and I just like to stare at it:

So my mind blanked on the usual—French toast, eggs, oatmeal, etc—and instead, a vision of a lovely, local breakfast appeared.  This salad had our baby kale and our radishes just picked, washed, and popped in.  I added some local chickpeas we had soaked and cooked up the other night.  The dressing is oil and vinegar, which are not local, with herbs chopped into it, which are from our garden.  The balsamic made the radishes perfectly sweet.  For lunch I’m having granola with milk, just to confuse my body further!

    I feel confused like that at least once a week it seems :-D Often I’ll stand in front of the cabinets/fridge/etc. and wonder just what it is I *eat* every day.  Or more accurately, what I actually like.  Sometimes I end up just tossing something together vaguely and not being satisfied, other times it turns out wonderfully…. a couple weeks ago I was so confused about dinner foods, so I made pancakes with cooked apples on the top, just as the first things I spotted available, and it was one of the best meals I’ve had in a long time!  Sometimes confusion is good, huh? Sounds like it was that way for you this time.

    Ooh, pancakes with cooked apples…  Yum!  Yeah, this was definitely one of the better experiences!
