One Local Summer, Week 8:  Midwest

The variety of summer produce is widening, and we’re all making good use of it.  Lesli of Going Green is making lots of salads with her CSA allotment.

Jenny of The Nourished Kitchen is cooking up a storm, her week 8 meal consisted of roast chicken, new-style peas and carrots, braised fennel with basil, simple salad, and cherry clafoutis for dessert.  Check out her fantastic recipes for everything!

Karen at toteleeding had a lovely meal of baked tomatoes stuffed with bread crumbs, herbs from the garden and goat Parmesan, along with fresh beans and musk melon, with blueberry pie for dessert.

Corn is beginning to come into its own, and, like a lot of us Destabee of Kaleidoscope Living is making it the star of her meal.  Along with the corn she served a salad from her garden, potatoes, and melon.

Anna of twelve22 is also enjoying the widening variety, especially in simple meals, such as this week’s meal of shredded potato and zucchini hash browns and green beans from the garden.

Katherine of Kitten’s Lost Her Mittens also savored a simple meal of steak and salad.

Sirena of Swimming in this Sea of Life had a grilled “veggy extravaganza” this week, with stuffed anaheim peppers, grilled zucchini and grilled potatoes.  With Bing cherries for dessert.

One again the overachiever, Joy of The Spiral of Seasons had two all-local meals in one day with zucchini with Mexical purslane stuffing and has some ideas to adapt the recipe to make it more to her liking and more squash for supper, grilled along with corn and what looks to this vegetarian’s eye like chicken, or maybe turkey.

Anne of Green Leanings had a meal featuring meat cakes (think meatlof) topped with mashed potatoes and bacon sprinkles. Side dishes were corn on the cob and pole beans with onions.

Ellen of The Daily Grind had a yummy CSA salad with lettuce & beets, fava beans, local tofu and pomegranate dressing. 

Debbie (Rites of Passage) also had a simple meal featuring fresh corn, with mixed zucchini and yellow squash, roasted new potatoes, and green beans.

Addendum:  Becke of Columbus Foodie had a late entry of a fried bologna sandwich (a gourmet version, it looks to me), and some sweet corn.
