Please advise!  Anyone have any idea what to do with that funky sunshine winter squash?  smile

Roast ‘em like Mac did! Or, we sliced and cored them, put them in a marinade and grilled them. Delicious!

Sorry-- spoke too soon. Roasting would be easier than grilling for that squash, I think.

I think the Sunshine squash is a variety of Kabocha, so you can roast it.  I found a lovely sounding recipe on Epicurious for Roasted Kabocha Squash Soup with Pancetta and Sage.

I have 3 basic recipes for any squash.. roasted with onions in a casserole, in soup, and in a really nummy and very fattening white sauce veg lasagna.
